When we started our production, in 1995, the winery was located in a small disused barn that we converted into a cellar. Today’s structure, instead, was built in 2000 and has been further extended over the years.

From vineyard to cellar

The winery is located in the heart of the estate allowing us to minimize the time spent by the harvested grapes in the baskets, thus contributing to the quality of our wines. The vinification process for red berried grapes begins with destemming and fermentation in stainless steel vats. Fermentation with maceration is managed with mainly manual pumping over followed by a soft pressing of the pomace. White berried grapes, instead, are immediately pressed and the fermentation takes place in stainless steel vats.

Wine maturation

The maturation process is different depending on the type of wine to be produced.

Most of the fresh and fruity wines such as whites, rose and reds - best enjoyed young - mature only in stainless steel vats. This allows to preserve the integrity of the original characters of the vine as well as the freshness of aromas and taste.

More structured and complex wines, instead, mature in wood. Choosing the type of wood and its size is crucial and varies according to the aims you want to achieve. During the maturation in wood, the taste of wine becomes smoother and more balanced, as polyphenols partly combine and transform, modifying their structure.
